Croatia's coast is the reason people come: Dubrovnik's city walls, Split's Roman palace, Hvar and Korčula, and the Kornati islands, which are best seen from a boat. Inland, Plitvice's lakes and waterfalls are the single most photographed thing in the country, and worth the detour.
It is busy in July and August and much better in June or September. Sailing a week of the Dalmatian islands is the trip most people come back wanting to repeat.
