Cappadocia is a landscape that does not look like anywhere else: volcanic tuff eroded into fairy chimneys, Byzantine cave churches at Göreme, and underground cities at Derinkuyu that go eight storeys down. The hot-air balloons at dawn are the image everyone comes for, and they are genuinely worth the 4am alarm.
Staying in a cave hotel is part of it. Two nights is the minimum, three is better, and the valleys are best walked.
